Five Paleo Dinners To Cook Next Week #49

Well, we made it through the holiday season. YAY!

Now what?

Maybe you’re Whole30-ing. Or maybe just “back to normal.” Whatever your eating plan right now, you’re probably done-done-done with holiday food. Here’s a collection of easy, delicious, Paleo and Whole30 compliant recipes to help you feel optimistic about 2017. Hope these help you feel comfy and cozy.

Dinner Ideas (Whole30 compliant)

Fiesta Pork Chops

Cookup Tips: This tastes best when it’s made to order, but good news! It’s just about 30 minutes, beginning to end. Fast and easy. Olé!

Recommended Sides: Keeping with the Latin theme, Crispy Plantains with Garlic Sauce are a great go-along—or add starch with classic home fries or pretend starch with pretend rice.

Chicken Nanking

Cookup Tips: The chicken can be marinated overnight (but not longer; the texture gets weird). Prep the veggies and the sauce in advance. When it’s time to eat, just follow the stir-fry instructions.

Recommended Sides: This tastes great with Oven-Roasted Cauliflower Rice, but you could also add more veggies and turn it into a noodle bowl with a bed of zucchini noodles.

Czech Garlic Soup

Cookup Tips: Make a big batch during your Cookup and eat soup at any meal all week long! It’s easy to add ground beef or pork to the soup to make a complete meal, and cooked, cubed pork or beef works great, too.

Recommended Sides: Instead of adding protein to the soup, try a batch of Czech Meatballs or Scotch Eggs on the side to add protein to your meal.

Bacon-Jalapeño Burger Balls

Cookup Tips: Meat “dough” can be made 1 day in advance then cooked—or you can cook the meatballs during your Cookup and re-heat just before eating. They’ll stay fresh and tasty for 5-6 days after cooking. They also freeze like champs!

Recommended Sides: You kinda really need some oven fries with these. You can go for Crispy Oven-Baked Sweet Potato Fries, Herb Parsnip Fries, or Classic Diner-Style Home Fries—don’t forget the Kickass Ketchup! You can prep all the potatoes in advance, then throw them in the oven with the meatballs just before eating.

Paleo Creole Ham & Cauliflower Rice

Cookup Tips: Chop the raw cauliflower into rice and store in a covered container in the fridge until you’re ready to make the whole recipe. You can also cut up the veggies and ham in advance.

Recommended Sides: This really doesn’t really need a side, but if you want extra credit, and extra vegetables, I recommend steamed green beans with garlic, olive oil, salt, and pepper.

Condiment (Whole30 compliant)

Ranch Dressing

Cookup Tips: Make this during your Cookup and add flair to your meals all week. It’s great on salads, sure, but you can also drizzle it on hot vegetables or a roasted chicken, plop it on a bunless burger, and use it as a dipper for roasted sweet potato fries.
