Five Paleo Dinners To Cook Next Week #33

Last week, I shared some of my favorite rejuvenation secrets (A Room with a View! The Night Circus!) and favorite recipes. For this edition of ‘Five Dinners,’ I thought it would be fun to ask four of my paleo blogging friends to share their favorite recipes.

Spoiler alert: They have very good taste!

It’s easy to see why my cooking pals chose these meals as their favorites: They’re loaded with bold flavors, easy to make, and sure to satisfy even the pickiest of eaters. I included quotes from each of them about why they love the recipes, and I added Cookup tips and recommended sides so you have everything you need to plan a week of delicious dinners. Happy cooking!

Dinner Ideas

italian_hoagie_saladItalian Hoagie Salad — Mel Joulwan’s Well Fed

Why It’s My Favorite: It’s the best part of a sub without the bun: spicy Italian cold cuts (pepperoni!), shredded lettuce, and onions with olive oil and oregano. It’s crunchy, greasy, crispy, slinky all in one bowl—and it can be thrown together in about 10 minutes.

Cookup Tips: This taste best when it’s tossed just before eating, but if you wanted to get a jump on it, you could pre-julienne the deli meats.

Recommended Sides: It’s everything you need in one delicious bowl!

DSC_6785Pomegranate Habanero Shredded Beef — Stupid Easy Paleo

Why It’s Steph’s Favorite: This recipe has just a few ingredients, but it’s absolutely jammed with flavor. The beef gets so tender, and the pomegranate juice provides a nice punchy background note that’s ever so subtly sweet-tart. A little heat from the pepper rounds it out the flavors!

Cookup Tips: This can be made over the course of a lazy weekend day, then turned into kickass meals all week long. It requires almost no hands-on work—the oven does all the heavy lifting for you.

Recommended Sides: The flavors complement Garlic-Balsamic Grilled Butternut Squash beautifully.

Easy-Thai-Coconut-Chicken2Easy Thai Coconut Chicken — Popular Paleo

Why It’s Ciarra’s Favorite: You’ll amaze yourself by what you can do with 30 minutes and a handful of easy-to-find ingredients! Easy Thai Coconut Chicken is equal parts comforting and exotic and goes great over cauli-rice, white rice (if it agrees with you), or even eaten as a soup. It’s one of my go-to frugal meals when I’m short on time, but still want to put something healthy on my family’s plates.

Cookup Tips: This is another super-fast recipe that you might want to cook just before eating. If you want to get a jump on it during a Cookup, you could prep all of the raw vegetables and store them in airtight containers in the fridge, then cook everything at meal time.

Recommended Sides: Pile it on top of Oven-Roasted Cauliflower Rice, or put a handful of baby spinach leaves in the bottom of the bowl to make a green veggie bed.

Thai Sweet and Sour Stir-Fry with Shrimp — The Domestic Man

Why It’s Russ’s Favorite: Few dishes capture the bright and fleeting passion that surrounds summer. This stir-fry does just that! You can throw it together in less than 10 minutes, and devour it in even less time.

Cookup Tips: This recipe is so fast—and tastes so fresh—it makes the most sense to cook it just before eating.

Recommended Sides: Pile it on top of Oven-Roasted Cauliflower Rice.

cracklinchickenCracklin’ Chicken — Nom Nom Paleo

Why It’s Michelle’s Favorite: This recipe gives you the biggest flavor bang for your buck: crispy, crackly skin and juicy meat without too much effort. Plus, my whole family loves it— even my picky son Ollie.

Cookup Tips: Make these chicken thighs just before eating for maximum crispiness.

Recommended Sides: Keep it simple with a crisp, bright side salad like Simple Red Cabbage Salad, Snap Peas with Lemon, Mint, and Pistachios, or Lemon-Maple Kale Salad—or serve alongside a cooked veggie like Mustard-Garlic Brussels Sprouts or Herb Parsnip Fries.

Why It’s My Favorite: It’s loaded with flavor! And it couldn’t be easier to make: throw a few ingredients in the blender and bam! a super salad is seconds away.

Cookup Tips: You can make this during your Cookup in under 10 minutes, and it stays fresh in the refrigerator for 1-2 weeks. The recipe lists lots of creative ideas for how to put this dressing to good use. (It’s my favorite recipe from Well Fed 2).

Treat

Why It’s My Favorite: They’re perfectly sweet-salty, and ridiculously satisfying. They seem like a treat, but they’re really an everyday food. I love that!

Cookup Tips: These take about 20 minutes to make and are the perfect picker-upper for salads, or alongside some fruit and protein for a snack.
