Five Paleo Dinners To Cook Next Week #2

It’s Thursday, which means it’s almost Friday… which means it’s not too early to start thinking about the Weekly Cookup you might be doing this weekend.

Here are five paleo and Whole30 compliant recipes you could make for dinner next week, along with a recommendation for a condiment to spice up your other meals and a crunchy treat that’s Whole30 approved and lets you play along with the pumpkin-spice craze.

I included some tips for each recipe, in case you want to do a big cookup to get ready for the week.

Dinner Ideas (Whole30 compliant)

Classic Paleo Beef Stew | meljoulwan.comClassic Paleo Beef Stew

Cookup Tips: This tastes even better after a few days in the fridge, so you can make it up to 5 days in advance. It also freezes great, so think about a double batch.

Paleo Egg Foo Yong | meljoulwan.comEgg Foo Yong

Cookup Tips: This recipe is pretty much made from leftovers, so if you cook chicken, beef, or pork during your Cookup, you can toss it into an Egg Foo Yong patty with whatever leftover veggies you have on hand.

Chicken Pesto Meatballs | meljoulwan.comPesto Chicken Meatballs

Cookup Tips: This also tastes even better after some time in the fridge, so you can make the whole shebang during a Cookup and eat it later in the week. It’s also great for freezing! You can serve these on top of Zucchini Noodles: prep the zucchini in advance: julienne it, sweat it, rinse it, pat it dry, and place in fridge until you’re ready to eat.

Cookup Tips: You can prep all of the components in advance: poach the chicken, make the mayo, chop the veggies, mix the dressing. Then when it’s time to eat, toss it all together and enjoy!

Cookup Tips: These hold up great in the fridge and reheat (and freeze) beautifully, so they’re perfect for Cookup action. Serve them with the leftover mayo from the Vietnamese Chicken Salad, or with the Spicy Coconut Mayo below.

 

Condiment (Whole30 compliant)

Cookup Tips: This is delicious on a green salad, or dabbed on top of the Salmon Cakes or Egg Foo Yong. It’s good until the expiration date on the egg you use to make your mayo.

 

Treat (Whole30 compliant)

Cookup Tips: These are fast and easy to make, and they add a crunchy zip to lots of dishes. Sprinkle them on a green salad with oil and vinegar. Toss into a Hot Plate with ground beef, sweet potatoes, and kale. Toss into a bowl of Golden Cauliflower Soup. Or eat a handful with a piece of fruit as a snack.

    Luv the convenience of your weekly dinners. It is a nice addition to the weekly cook ups, the hot and cold plates, etc……esp. egg foo yong with leftovers. Even if one does not do Paleo, your suggestions make it simple and quick to eat excellent tasting food. The only complaint I get from hubby is he now gets a stomach ache when he eats convenience food. (Notice I avoided the word “healthy”…..brings up ideas of bland tasteless food to me)

    What a great idea. I am really enjoying both your cookbooks. I must say that I was getting pretty tired and fed up with cooking. I found your website when I was completing my first whole 30.     This has been super helpful already! Could you also add a suggestion for a side to go with the dish?

    • Sure! I can add that next week. For now, here are some suggestions:

      Beef Stew: I’d probably just do a big green salad since the stew has veggies and starch.

      Egg Foo Yong: Again, it has just about everything you need inside it, but broccoli, green beans, snow peas, snap peas would all be good on the side, with a little sesame oil, salt, and red chili flakes. Cauliflower rice is also a nice side.

      Pesto Chicken Meatballs: Either spaghetti squash or zucchini noodles.

      Vietnamese Chicken Salad: Doesn’t need one because it’s got so many veggies already, but if you want one, I’d go with cauliflower rice.

      Salmond Cakes: They include a starch, so a non-starchy veg would be good: pick something green — broccoli, green beans, Brussels sprouts, kale, etc — and saute with olive oil, garlic, salt, and pepper.

    • Prague is the capital of the Czech Republic, and it’s a very lovely, modern city with a connection to its past. We’ll do the same things we do here: write my blog and cookbooks.

    I am just in LOVE with the “5 Dinners to make…” series. It is helping me so much with my current Whole30 meal planning. From Thursday’s post I have “meal prepped” the stew (had a bowl last night and licked my bowl clean!), the chicken pesto meatballs and the salmon cakes. ALL DELISH! I have been using both of your cookbooks since last summer and I have to tell you that I give you credit for teaching me how to cook. I mean, I’ve always been able to cook, but you taught me the Paleo/Whole 30 way. Thank you for your efforts – you are such a wonderful teacher!

    I receive you email newsletter and just wanted to say a word or 2 about black truffle salt. THE BEST black truffle salt I have ever had comes from Hediard. It’s a French store. The main location is at Place de Madeleine. I haven’t found any outlets in the US but I’m always on the lookout! I will try the one you linked until I’m able to go shopping in Paris again!

    I just wanted to say thank you for giving a healthy, positive place to hitch my trailer to. I’m 6 days post complete thyroidectomy and lymph node removal due to medullary thyroid cancer and I’ve been afraid to say it to too many people, for fear of sounding shallow, but I’m so afraid of getting fat because of this. I’ve been thin and fit my whole life and I’m freaked that this situation is going to derail me but after reading your blog and your cookbooks, I have a renewed faith that I’m going to manage this and not let it manage me. Yesterday, I read through Well Fed and made Czech meatballs and spaghetti squash and was so excited when my husband and 2 year old daughter loved it. Thank you for being a positive beacon in a see of thyroid horror stories and giving me a yummy light at the end of this tunnel.

    • Wishing you speedy and smooth recovery! It can be really challenging to learn how to live without a thyroid. I’ve had to adapt my eating and exercise habits quite a bit. But it’s not a dark pit of despair… you just need to work with your endo/functional medicine doc to get your thyroid medication levels right and go easy on yourself as your body adapts to its new situation.     Made the Classic Paleo Beef Stew Last night and it was excellent! My husband even enjoyed it although he is struggling on Day 2 with no Energy Drinks! I am hoping that keeping good yummy food around will help him get over the “Energy Drink hump” during the first week of his Whole 30. I also look forward to this post every week, helps me step outside my routine foods!

    • I’m glad it was a hit! Give my best regards to your husband and tell him I said to hang in there and just be stubborn, if that’s what it takes. He’s going to feel SO GREAT when he gets over the hump. I know how crappy that withdrawal can be, but it’s worth getting through it. It might last a few more days, but one day soon, he’ll wake up and feel good. MUSCLE THROUGH! Sending you both good vibes for an awesome month!
