I’ve been doing more reading than TV watching lately—because I’ve had a really good string of books—but the last few days, I’ve been totally sucked into the show Trapped on Netflix. Do you know this one? It’s a noir mystery set in Iceland: A murder victim is discovered in a middle-of-nowhere village just as an epic snowstorm hits, cutting them off from the rest of the world.
So bleak. So dark. So cold. SO MUCH FUN.
But looking over the recipes I chose for this week, I think I’m subconsciously having a reaction. Look at how colorful all these recipes are! I think it’s in response to the gray and white monotony of Trapped—plus, I couldn’t resist throwing in my Reykjavik Salmon Salad recipe because ICELAND. (Remember that time I went to Iceland?!)

Dinner Ideas (Whole30 compliant)
Paleo Bibimbap
Cookup Tips: This is the perfect meal for a weeknight if you cook the beef and veggies—and grate the cauliflower for the cauli rice—during your Weekly Cookup. You can even make the sauce in advance and store in the fridge for up to 5 days, so when you’re ready to eat, it’s just a matter of assembling the ingredients on your plate.
Recommended Sides: No sides needed!
Spicy Nigerian Street Fries
Cookup Tips: You can prep the nut-spice blend for the meat and cook the potatoes in advance. When it’s time to eat, stir-fry the steak and veggies while the potatoes turn into fries in the oven.
Recommended Sides: Honestly. Spicy beef. Veggies. Oven fries. What else could you possibly need?!
Bora Bora Fireballs
Cookup Tips: These succulent meatballs taste best when they’re made just before you eat them, but they’re worth a little bit of pre-dinner hustle!
Recommended Sides: These taste great on a pile of Oven-Roasted Cauliflower Rice, and also pair nicely with either Crispy (green) Plantains with Garlic Sauce or these Pan-Fried (yellow) Plantains. You might also want to garnish with some Sunshine Sauce… just sayin’.
Paleo Creole Ham & Cauliflower Rice
Cookup Tips: Chop the raw cauliflower into rice and store in a covered container in the fridge until you’re ready to make the whole recipe. You can also cut up the veggies and ham in advance.
Recommended Sides: This really doesn’t really need a side, but if you want extra credit, and extra vegetables, I recommend steamed green beans with garlic, olive oil, salt, and pepper.
Reykjavik Salmon Salad
Cookup Tips: Cook the eggs and make the mayo in advance. If you really want to go for it, you could also slice the cucumbers and store them in a plastic bag or covered container in the fridge.
Recommended Sides: This is complete as it is, but some cooled, boiled potatoes would be a nice addition.
Condiment (Whole30 compliant)
Sunshine Sauce
Cookup tips: In the Paleo world, peanuts are a big no-no. (Because they’re legumes, not nuts, and blah blah blah. Get the full explanation here.) But Sunshine Sauce, made from sunflower seed butter, is even better than peanut sauce… and it takes about 5 minutes to throw together. Drizzle happiness on veggies and protein all week long.

Watched every episode last year. Couldn’t stop, lol. It actually got me looking for Scandinavian/Nordic shows. So here’s my suggestions of some to try out:Hotel Beau Séjour, The Break (set in Belgian Ardennes), The Bridge (the original set in Copenhagen is better then the one in Mexico/US). The Fall (Belfast) and finally The Killing (US version) based on a Danish version but so far I haven’t found that one… As far as your meals I love all the color, I am shopping for the Bora Bora Fireballs and the Sunshine sauce (which I am VERY excited to try). Thanks for taking the time to make our lives just a little easier…..
Ooooh… thank you for the suggestions! We watched the France/England version of The Bridge set in the Chunnel. It was great until the ending—the ending made us really angry 🙂
That Sunshine sauce is to die for, lol. I LOVE sunflower seeds and sunflower butter. Gonna keep that one in the fridge at ALL times! Didn’t know the Bridge had a France/England version, so thank you for letting me know but since you’ve given me your critique, I’ll just recommend Copenhagen one from now on and pass on watching the France/England version, lol.
