The summer issue of Where Women Cook magazine is on newsstands now, and I’m giddy because… I’m in it!
In January, my dear friend Christine (kickass trainer and makeup artist extraordinaire) was my one-woman glam squad so Dave could snap photos of me and my Latin American Chicken for Where Women Cook. The quarterly mag shines the spotlight on all kinds of women in their kitchens and shares the stories behind the food they create.
I started reading this magazine so many years ago—I could never have imagined that I’d be in its pages. It’s such an honor and delight.
My profile story highlights the two constants in my life—food and writing—and how paleo brought them together in a completely unexpected way that’s literally changed my life. I chose to share the recipes for Latin American Chicken with Cucumber-Pineapple Salsa and Crispy Plantains with Garlic Sauce because I wanted to show the magazine’s readers—primarily women interested in cooking and stories—that paleo isn’t about deprivation. It’s about adventure, bold flavors, satisfaction, and sharing big platters of food with your favorite people.
As I flipped through the magazine, I was thrilled to see that another fantastic woman who cooks—Harmony Prom Dixon, a holistic wellness coach from Minneapolis—included Well Fed and Well Fed 2 in one of the photos from her kitchen. That’s just about the sweetest compliment ever. Be sure to check out Harmony’s comfort food recipes, like these grain-free pear pancakes.
