Five Paleo Dinners To Cook Next Week #13

Last week, Dave and I took 13 photos for our upcoming cookbook! (Well Fed Weeknights, coming to you on November 1, 2016. If you’re not already, now would be a great time to sign up for my newsletter. I’m starting to share sneak peek recipes!)

Here’s a preview of some of the new meals you can look forward to:

weeknights

Clockwise from the top, that’s BLT Egg Salad, Nigerian Beef Street Fries, Beef Milanese with Peach Salsa, and Italian Chopped Salad. Pretty exciting, right?!

But back to the present—or, more accurately—what you’ll be eating next week… I’ve got five easy, delicious, Whole30-approved, 100% paleo recipes for you—plus an essential condiment and a savory snack.

If you want to go all-in, you might want to try Week 2 of my Whole30 cooking plan to see you through the next week. It includes Taj Mahal Chicken, Chinese Five-Spice Pork Ribs, and Cinnamon Beef Stew,  plus step-by-step cooking instructions and a PDF shopping list you can print out.

Or you can dig into the recipes below. Happy cooking!

Dinner Ideas (Whole30 compliant)

Beef Stew Provencal | meljoulwan.comBeef Stew Provençal

Cookup Tips: This is a great one to make on the weekend and eat all week. I love to have stew for breakfast: it’s warm, comforting, and very filling—guaranteed to help you power through your morning. And this is one of my all-time favorite recipes; I’ve been making it since my college days.

Recommended Sides: A fresh tossed salad is the best with this—and maybe this Ranch Dressing. The flavors of the herbs are very complimentary.

Buffalo Chicken Salad | meljoulwan.comBuffalo Chicken Chopped Salad

Cookup Tips: Make the dressing, poach the chicken, and chop the vegetables in advance, then when it’s time to eat, just toss it together and dig in. (There’s a lot of major football this weekend, just sayin’…)

Recommended Sides: This recipe includes protein, veggies, and fat, so you don’t need to add a thing. But if you want to, Crispy Sweet Potato Fries are a yummy choice.

Bacon-Jalapeño Burger Balls | meljoulwan.comJalapeño-Bacon Burger Balls

Cookup Tips: Meat “dough” can be made 1 day in advance then cooked—or you can cook the meatballs during your Cookup and re-heat just before eating. They’ll stay fresh and tasty for 5-6 days after cooking. They also freeze like champs!

Recommended Sides: You kinda really need some oven fries with these. You can go for Crispy Oven-Baked Sweet Potato Fries, Herb Parsnip Fries, or Classic Diner-Style Home Fries—don’t forget the Kickass Ketchup! You can prep all the potatoes in advance, then throw them in the oven with the meatballs just before eating.

Mulligatawny Stew | meljoulwan.comMulligatawny Stew

Cookup Tips: This tastes even better after a few days in the fridge, so you can make it up to 5 days in advance. It also freezes very well, so think about a double batch. It tastes really great on a bed of Cauliflower Rice; you can turn the head of cauli into rice in advance, then store it in the fridge until you’re ready to cook it.

Recommended Sides: Mint Chutney!

Italian Pork Roast | meljoulwan.comSlow Cooker Italian Pork Roast

Cookup Tips: Definitely throw a hunk o’ meat into the slow cooker over the weekend. Future You will be very grateful.

Recommended Sides: Mashed Cauliflower and Zucchini Noodles are both great with this pork.

Condiment (Whole30 compliant)

Kickass Ketchup | meljoulwan.comKickass Ketchup

Cookup Tips: Make this during your Weekly Cookup and have it on hand all month to dip your Crispy Sweet Potato Fries or make Awesome Sauce.

Snack (Whole30 compliant)

Savory Paleo Granola | meljoulwan.comSavory Paleo Granola

Cookup Tips: This can bake in the background while you’re prepping the rest of your Cookup, and you can keep it whole, as pictured, or crush it in a food processor to make “Magic Dust.” I like to sprinkle a little of this on salads to add crunch—or on top of soups like this Sweet Potato or Golden Cauliflower.

YES! My husband and I cannot wait for the new cookbook. Every freaking recipe we make of yours we both fall in in love with. They have helped convert him to better eating (and made me a far better cook). I’m so glad you share your talents! Thanks!

Let me add my Hell Yeah! All your recipes are soooo delicious I am beginning to think I might be able to eat Paleo all the time. Until now, I always felt like I was missing out when eating Paleo. But when I eat your food (most recently the Lebanese 7-spice salmon cakes with the tahini dressing yesterday, and Chocolate chili for lunch today) I feel like all the non-Paleo eaters are missing out!

On that note, I tried to sign up for your newsletter, but the link appears to be broken. 🙁

Can’t wait for the new book.

    • I’m so glad the recipes are making you happy — that’s awesome! It’s IMPOSSIBLE to stick to any eating plan that doesn’t help you enjoy the food, so YAY! I’m happy these are working for you!

I just tried our newsletter sign-up and it worked, so I’m not sure what’s going on with you, but I added you manually. Hope that was OK!
