According to the Internet, May is National Salad Month. Who am I to disagree?!
With that in mind — and with potluck season officially kicking off in the U.S. with Memorial Day next week, a.k.a., the first official holiday of the summer — here are some of my favorite Paleo Summer Salads. They’re all easy to double and triple for sharing at potlucks, and they’re so packed full of flavor and texture and mouth explosions like fireworks, no one except your most astute friends and family will notice that they’re also ridiculously healthy.

I made your Turkish Chopped Salad for a brunch the other weekend. So good and everyone raved. Makes a frigging tonne though….so to jazz it up for lunches the next week I added some chopped cooked chicken and stirred in some of your mayo w/ a bit of curry powder and salt mixed into it. SUPER easy chicken salad!
Yes, it really does make a giant batch — but the leftovers are fun, right?! LOVE the addition of mayo and spices… so smart!
What perfect timing! Heading to a BBQ this weekend. Looks like I’ll be bringing a salad 🙂
Happy summer weekend! Hope whatever you decide to make is a hit!
this post is saving my butt, just in the nick of time! Off to the grocery store to buy ingredients for my contribution to a BBQ tonight. Had no idea what I was going to make. UNTIL NOW. Rock on!
Hope whatever you made was a hit! Happy summer salad-ing!
I love your sweet and salty broccoli salad. It tastes just like one I would order from the deli as a special treat. Now, I make it all the time!
I’m really glad you like it! It’s one of my favorites, too. In fact, I think I’ll make some today! 🙂
