Kitchen Jams: John Waite

One of my favorite bits of Well Fed 2 is the “moody cauliflower” playlist on page 30…

… because one of the things that makes cooking my favorite foods even better is singing really, really loudly while I chop and stir.

I am right now, this very minute, in the middle of a Weekly Cookup. My iTunes gave me these two John Waite songs, and I was belting them out with complete abandon. Then I hit repeat and listened to them again because John Waite sings like a fucking boss.

Now I’m sharing them with you. Because I love you. And you deserve something awesome.

OK. One more aside and then I have to go because I’m in danger of burning my steam-sauéed veggies: I saw John Waite play live on my birthday a few years ago, and it was fantastic. His voice is just the same – how does he manage to be rough and soft at the same time?! It was brilliant.

    I wrote to you a week ago about my undelivered WF2. My faith is restored in the USPS, as my pre-order copy was only temporarily lost in the mail. It was eventually returned to Amazon, who credited my account! AND the loveliest postal worker ever called me yesterday to follow up. Sometimes the system just works. It’s amazing more stuff doesn’t get lost in the mail, considering how much we send and receive. And I’d bet those postal workers only hear about it when something goes wrong.

    Anyhow, I’m so glad I didn’t dally and just ordered myself a new copy of WF2. Elvis Burgers were fun, for sure, but made Deconstructed Gyro with sauce last night. YUM!!! Talk about amazing taste for such minimal effort. Perfect meal for a cold, dark wintery day when you have other things to do around the house then spending hours in the kitchen.

    I just received well fed 2 and am super excited to start cooking foods I never thought I would be able to put together. I am not a cook but your recipes are easy to follow.

    I am looking to make your ketchup recipe but not sure about the figs, should I use fresh or dried figs? How were you able to blend them so well?

    Everything you need to know is in the recipe! The ingredients list calls for dried figs, and in the first step, you puree them in a blender or food processor. That makes them very smooth. Good luck!
