Paleo Cinco de Mayo Recipes

Before you crack open an avocado or mix up a batch of Nor-Cal Margaritas, let’s clear up a possible misconception about Cinco de Mayo. It is not Mexico’s Independence Day. That is September 16.

May 5 commemorates the day that Mexico’s scrappy army enjoyed an unlikely victory over Napoleon III’s forces at the Battle of Puebla. Mexico owed war debts to European countries, the French came to collect, and Mexico was not down with that.

For whatever reason—perhaps because Americans really enjoy summer holidays?!—Cinco de Mayo is more an American holiday than a Mexican one.

So what?! Let’s celebrate!
