10-Day Meal Planning Bootcamp

Meal planning. It’s either the Best Thing In The World or a Total Nightmare, depending on the time of year, what’s going on in my life, and—honestly—how hungry I am at the moment. And I’m supposed to be a food professional! But… here’s a thing that might be helpful to all of us: a free 10-Day Meal Planning Bootcamp.

It’s 10 fun challenges that will make you a meal planning superstar.

The Bootcamp runs from December 20 through January 8, and unlike a real bootcamp, it doesn’t required combat boots and no one will be yelling at you!

Each day, you’ll receive an email that includes a meal planning tip and a task—each challenge is designed to take just 20 minutes. (Really! 20 minutes. You can set a timer and test the veracity of that statement!) You’ll tackle stuff like the nuts-and-bolts of planning, setting up your pantry like a pro, the quickest veggie sides, kitchen organization, and more.

    Meal planning is my nemesis, I am determined to make peace with it in 2018, because life is so much easier when I have a plan. Would love some good tips, just wondering who is doing the Bootcamp, anyone know?

    Wondering if you could clarify something for me…you say 6-8 cups of veggies per day…how many ounces/pounds would that be…I shop once a week as I live a half hour to the nearest grocery store so knowing how many pounds of veggies I would need would be most helpful.

    • I wish I could tell you specifically, but different veggies have different weights. One way for you to estimate is to try something like this:

      At lunch every day: 1 carrot, 1/2 cucumber, 1/2 bell pepper
      At dinner (M-F): broccoli, green beans, kale, brussels sprouts, zucchini
      extras: lettuce, scallions for salads

      If you buy about 1 pound of each of the dinner veggies and 7 carrots, 4 bell peppers, 4 cucumbers, and 2 heads of lettuce that should get you close to a week’s worth of veggies. You can start with a template like that, try it a few times, then tweak it as you better learn your habits.

        Thank you…I was thinking about 7 pounds per week or more would cover it, but just wanted to be sure. I try to have more then less and this is a great starting point.
