12 Super Paleo Soups

One of the things I love about soups is that they’re greater than the sum of their parts. You start with basic ingredients—humble vegetables, hearty protein, and a lot of water. By the end, after a slow simmer has worked its magic, you’re left with nutritional gold.

They span cuisines and a wide variety of ingredients, but they have a few key things in common: They’re colorful, full of bold flavors, are seriously healthy, and taste even better after chilling in the fridge for a day or two.
