Whole30: Day 12 Recap

Whole30: Day 12
So… this is how it’s going to be, huh? One day, it’s all unicorns and rainbows, then the next, it’s short tempers and discombobulation. Fine! If that’s the way you want it, you won’t break me. I’ll just keep doing what I’m doing and wait you out. But for the record, you’re a total brat.

8.5 hours — 10-something to 6:30, then reading, then another hour of sleep
Cooking & chores: I had about a bajillion things I needed to get done today, so the only walk I got was to Habanero for breakfast — plus my speed-walk around the grocery store and a few hours on my feet making food for the week. Our cookup: Chocolate Chili, butternut squash soup, collard greens, broccoli, yellow squash, spaghetti squash, Vietnamese Chicken Salad, and Thai beef curry.
Stretching: I took advantage of watching the closing ceremonies of the Olympics to work on foot/ankle flexibility. I laced my fingers between my toes to help spread them then pointed and flexed a few times. It was very uncomfortable and unpleasant, and therefore, necessary.

I’ve found my appetite is less ravenous, and I feel better if I eat in a 11-hour window — usually between 9:00 a.m. and 8:00 p.m. so I can stop eating about 2-3 hours before going to bed — and don’t snack between meals or before bed. Because I’m dealing with my thyroid experiment, I’m measuring and tracking my food right now. I aim for 40% fat, 30% protein, 30% carbs.
Breakfast, 10:30 a.m. — Habanero Cafe
2 eggs with Ranchero sauce + a side of barbacoa
1 cup watermelon @ home
Lunch, 4:00 p.m.
2 ounces leftover beef brisket from Woodpile BBQ
2 cups cabbage + 1 teaspoon ghee
1 cup watermelon
Dinner, 7:00 p.m.
Giant Awesome Salad:
1/2 head lettuce
1/4 sweet onion
1/2 very large cucumber
1/2 very large red bell pepper
1 quite large carrot
4 ounces ground beef
1 teaspoon extra-virgin olive oil + 2 tablespoons red wine vinegar + Italian herb blend
1 tablespoon homemade mayo
1/3 cup raspberries
2 Brazil nuts
Edgy and anxious. I had a mini crying meltdown after breakfast, and as I was crying, I said to Dave in a very pathetic voice, “I don’t know what just happened. I don’t know why I’m crying. This sucks.” I guess I’m glad that I don’t actually feel sad, but the emotional roller coaster of this thyroid experiment is wearing out its welcome. Anyway, two seconds after the waterworks, I was fine. Tomorrow is Day 23 of my cycle, which means I’m heading to PMS-Town — and that explains why I kept dropping things in the kitchen and bashing my elbows into cabinet doors and pot handles. Good times!
