Very finely chop unsalted almonds or macadamia nuts and sprinkle on top when you take the bowl out of the fridge. Tastes decadent! But it’s soooooooo good for you.

Try strawberries, blueberries, raspberries, blackberries, pineapple, or… this is bold, people… a mix of fruits. YUMMM-EEEE.
A word of caution: It’s easy to OD on fruit and coconut milk. Tastes like dessert! So even if you’re usually an eye-baller, you might want to actually measure this one. Go with about 1/2 cup of fruit (Unless it’s strawberries; then you get a whole cup.) with 1/4 cup coconut milk. This will give you all of the enjoyment will keep your ass off the express train Sugarland (with stops in Crankytown, Guilt-ville, and Carb Crash City).

great post… the bad thing(well it was GOOD) wa that i had actual mango sticky rice when you posted this. I take my mom to a thai place and she loves the stuff… too bad i end up eating most of it 🙂 oops i mean 🙁
OK I'm gonna one up you. Try it with FROZEN blueberries, then it's like real frickin ice cream. Yummmmmm and so easy to OD. But an excellent dessert.

tonight i pureed some frozen mango, folded it into some chilled coconut milk, then put it into my soft-serve ice cream maker… pure heaven and no added sugars.
I just found you through PaleOMG (Paleo Fig Fudge Balls are on my to do list) and after nosing around I found this! Living in Tropical North Queensland, Australia its mango season and on Xmas Eve I brought a tray of them, sliced them, placed on baking trays in freezer and once frozen transferred to containers to snack on as an when required. Am now on my way out to buy coconut milk – this looks so yummy and I have been trying to find new snack/dessert ideas.
Any fruit + coconut milk is pretty awesome. Enjoy!
I love your site! I sorta stole this idea and ran with it. I made the coconut milk into a whipped cream, macerated some strawberries with mint and folded it into the cream. then put it on mango. then I almost died of delish overdose. the next night? I put it on grilled peaches. Yeah I know. I have a stash in the freezer right now to see if I can pull of some sort of frozen treat as well.
Ooooh… fun! I love that you made it high-brow. Sounds yummy! Whipped coconut milk is such a treat. YAY!
Just found this and gonna give it a try. Way way back in my vegan days i used to make mango mousse with pureed mango and melted coconut butter. All mixed up and put in the fridge to set.
