Nikki’s Coconut Butter Giveaway

Look. I know I have a deserved reputation as a stick-in-the-mud about paleo treats. I whole-heartedly agree with the Whole9’s argument about SWYPO. So, yes, I wrinkle my nose at baked confections made with almond flour and at chocolate, gooey goodies loaded with honey. But you guys know the truth, right? The lust I feel for those treats – coupled with the knowledge that, on most days, I shouldn’t eat them – is the real reason I lash out at them. I talk smack about them because, secretly, I (sometimes) covet them.

Even I like a little something sweet now and then.

Nikki’s Coconut Butter is a delicious compromise. One spoonful – let’s call it a half tablespoon – tastes like heaven, and the ingredients are clean, the flavors are rich, and the whole thing is a luscious experience… without releasing the sugar demon.

I can’t eat Nikki’s Coconut Butter right now because of my ultra-sexy elimination diet. But you can. Rejoice!

About Nikki’s Coconut Butter

Made from almost all organic ingredients, Nikki’s Coconut Butter is soy-free, dairy-free, egg-free, and gluten-free. The ingredients are all real food, but because all of the flavors involve organic honey, they’re not Whole30 approved.

When I first started writing about coconut butter in my blog a few years ago, I got a lot of questions about how to eat it. My answer is always, “With a spoon.” But if you want something more involved than that, you can also spread it on fresh fruit or use it the recipes on the Nikki’s Coconut Butter web site. (They’re not all sweet treats; I was excited to see recipes for Brussels sprouts and Coconut Lime Shrimp.)

OK. Enough grown-up information. Let’s get to the luscious stuff.

There are five scrumptious flavors:

Chocolate Hazelnut Brownie: organic coconut, roasted hazelnuts, organic cacao powder, organic extra virgin coconut oil, organic honey, organic vanilla, salt

Honey Pecan Pie: organic coconut, roasted pecans, organic extra virgin coconut oil, organic honey, organic vanilla, cinnamon, salt

Vanilla Cake Batter: organic coconut, organic extra virgin coconut oil, organic honey, organic vanilla, salt

Midnight Mocha: organic coconut, organic cacao powder, organic extra virgin coconut oil, macadamia nuts, espresso beans, organic honey, organic vanilla, salt

Macadamia Nut Cookie: organic coconut, roasted macadamia nuts, dates, organic honey, organic vanilla, salt

My favorite is the Honey Pecan Pie, but to be fair, I haven’t tried Vanilla Cake Batter yet, and that sounds damn good. I should be able to dunk a spoon in it sometime in November when we re-introduce honey to our diet for three days. Can’t wait!

Full disclosure: Nikki’s Coconut Butter sent me  free samples, but the raving about how much I like it is all true and all mine. If I didn’t like it, I wouldn’t have mentioned it at all, and I would have just stuck with my plain homemade flavor. But here’s the deal: Nikki’s tastes so much better – creamier, smoother, richer – than my homemade version. I don’t often prefer commercial over homemade, but I have to admit that in this case, she wins!
